Dear Wine Ladies,
A good friend of mine has just announced her engagement to a wonderful man of whom we all approve wholeheartedly! We are in the midst of planning a couple of parties; one to celebrate her engagement with a large group of friends and family as well as a second, a surprise, that will involve just the girls for one final girl’s night out. I would like to serve some sparkling wine at the engagement party but am not very experienced with opening the bottles. Is there a proper way?
Secondly I’d like to find something fun to serve as an aperitif for our “ladies only” evening before we hit the town, preferably a wine. Unfortunately my budget is limited to around $15.00. Any suggestions would be greatly appreciated. Thanks Wine Ladies.

Sounds like quite the plan, lucky girlfriend! We’ve got a fabulous suggestion for your final night on the town with the ladies! The wine or trio of wines actually is called “Girls’ Night Out” produced by Colio Estate Wines. These VQA wines sell for $12.95 per bottle, represent great value and have all the bases covered when it comes to one’s personal taste with a Chardonnay, a Merlot and a rose all currently available. The packaging is great too; fun and elegant with a simple cocktail dress gracing each of the three labels. Perfect!

Onto the question of opening sparkling wines. Despite the all too common image of the cork popping and flying across the room, the proper method allows for quick, quiet and safe extraction. It’s hard to believe, but the pressure in a champagne bottle is approximately 90 pounds per square inch, two to three times the amount of a car tire so opening a bottle properly is key; besides who wants to waste all that wonderful bubbly? The trick to successfully opening a sparkling wine, meaning with ease and with a hush instead of a pop is to control the cork. Begin by removing the foil and then placing a white tea towel over the neck of the bottle. Under the towel reach for the cage and turn the wire six times to the left loosening the cage. Place your thumb over the cork which the tea towel is still covering and hold the bottle at a 45 degree angle. Gently turn the bottle, not the cork until finally you feel the cork release. The cage, under the towel restrains the cork. Remove the towel, wipe the bottle and pour. Success, the wine has been opened without incident, no loud pop and no wine wasted. Cheers!
